Breaded and Fried Asparagus - Paleo Friendly



Ingredients

1 bunch of organic asparagus
1 pasture-raised egg
1 cup cassava flour
1 clove garlic, crushed
2 Tbsp smoked paprika
frying oil - I used Kerry Gold grassfed butter. Coconut oil and lard are also great!

Directions

Begin by cleaning your asparagus and cutting them into 2 inch pieces. Then pat them with a towel to remove any outside moisture- set aside.

Next, in a small bowl, throughly mix together cassava flour, paprika and a 1 tsp of himalayan salt- set aside.

In a separate small bowl add in the egg and a pinch of salt and whisk for 30 seconds - set aside.

Begin heating up a frying skillet containing your  frying oil at about medium-high heat.  Once oil is hot, reduce temperature just a bit, toss in crushed garlic and begin dipping your asparagus into the egg bowl with one hand (wet hand)- tossing it into the flour mix and covering with the other hand (dry hand). Then with your dry hand- shake off the excess and add to frying pan.

Fry until golden brown, adding in more cooking oil as needed and flipping to cook other side until golden brown as well (or until desired crispy-ness).

Remove from pan and place on a plate to drain and cool.
